Quick oats, wheat puffs, and cornflakes were turned into decadent desserts, simply by adding butter, sugar, and other sweeteners like honey and maple syrup.

Roll the mixture by hand into small balls that are about 1/2 inch big. The yield will be around 2 dozen. They should hold their shape firmly, without drooping or falling apart.

If the dough is falling apart, mix in more water, a teaspoon at a time.

If it is drooping after shaping, chill the dough for about 20 minutes to make it slightly firmer, and try again.

Place the rolled cookies on a plate or tray.

FAQs

What makes cookies fluffy and not flat? ›

Room temperature butter is just the right consistency to incorporate air when it's creamed with sugar. These trapped air pockets result in risen, fluffy cookies. If the butter is any warmer, it won't incorporate enough air and your cookies will have less rise.

Why are my chocolate chip cookies always flat? ›

OVEN IS TOO HOT

If your cookies consistently come out flat, you may have selected the wrong baking temperature. If you bake cookies using too much heat, the fats in the dough begin to melt before the other ingredients can cook together and form your cookie's rise.

What happens to cookies with too much butter? ›

But one unexpected error bakers can make is adding too much of a good thing, butter. Although butter generally makes it all better, bakers who go overboard with it are dooming their cookies to a greasy and crumbly texture.

What makes cookies flat and crispy? ›

Melted butter – To achieve thin and crisp cookies, I've discovered that melted butter is really crucial. Melted butter helps the cookies to spread out and become flatter with crisp edges.

Should I use baking soda or baking powder in cookies? ›

Baking soda is typically used for chewy cookies, while baking powder is generally used for light and airy cookies. Since baking powder is comprised of a number of ingredients (baking soda, cream of tartar, cornstarch, etc.), using it instead of pure baking soda will affect the taste of your cookies.

What is the secret ingredient to keep cookies soft? ›

If you enjoy your cookies soft and chewy, chances are likely the recipe contains a common ingredient that serves a very specific purpose. No, it's not granulated sugar, nor the butter. It's not the egg, all-purpose flour, or even the vanilla extract. The simple, yet oh-so-necessary component is cornstarch.

Will melted butter make cookies flat? ›

Cookies made with melted butter often deflate and become denser when they cool, resulting in a perfectly cooked fudgy center — a similar textural result to brownies that get rapped (aka banged against an oven rack mid-bake to deflate them) or Sarah Kieffer's iconic pan-banging cookies that turn out pleasantly compact.

Does old baking soda make cookies flat? ›

Yes, baking powder and baking soda can expire! Once they've been opened, it's best to use them within six months, so make sure to check expiration dates before you start baking. Expired leavening agents lose their effectiveness, leading to flat cookies.

Is baking soda or baking powder better for chocolate chip cookies? ›

Baking powder is likely your best bet if you are in the mood for a light, fluffy cookie. However, when the craving hits for something chewier and denser, like chocolate chip cookies, reach for that box of baking soda to create your perfect batch.

What happens if you put too many eggs in cookies? ›

Far too little, and the dough will not come together properly, and bake up dry and crunchy. But on the other hand, too much egg, and your cookies will puff up and be cakey. They will be missing that chewy wonderfulness; they'll be more like little slabs of cake.

Why do my cookies stay in a ball? ›

Yes, but if you add too much flour, your cookies won't spread as they bake. Too much flour causes the dough to become dry and crumbly, which prevents it from flattening out during baking. As a result, your cookies will stay in their original shape instead of spreading out into nice circles.

How do you make cookies soft instead of crunchy? ›

Baking cookies quickly in a hot oven – at 375 degrees F as opposed to a lower temperature – will make for soft results. They'll bake fast instead of sitting and drying out in the oven's hot air. Ever so slightly underbaking your cookies will give you softer results than cooking them the full amount the recipe says.

What makes cookies chewy instead of crispy? ›

The ingredients you use and how you shape your cookies both play an important role in whether your cookies turn out crispy or chewy. The type of flour and sugar you use, if your cookie dough contains eggs, and whether you use melted or softened butter all factor into the crispy-chewy equation, too.

What makes cookies less flat? ›
